Taco Tuesday!



I have to share this, as I have been doing it for about a year. Have you ever seen the meme about being a Mom and having to figure out what's for dinner for the REST OF YOU LIFE? I saw it and started cracking up because it is true! We have children, and a husband, and whoever else lives under our roof to feed. And sometimes it can get quite stressful. After making decisions all day, every day, for my child about what to wear, where to go, getting snacks, answering questions about the world, among paying bills, dishes, laundry, sweeping floors, and making breakfast and lunch! By the time dinner rolls around, I have no energy left to even think about what to make. OOOH, and did I even thaw out meat for tonight? NO! Why am I telling you all this stuff? Stay with me.


Anyone who is a Mom, or even a stay-at-home Dad, can relate. After a long day with kids, making decision after decision, your brain is completely fried. Sometimes I have a caffeine boost which helps me make it through bath time and bedtime. Other times, I just roll with whatever energy I got.


But on this special day, the golden day of the week called TUESDAY, I get a spring in my step and a gleam in my eye. Because I know, my brain and me, technically, have the night off. Why? Because in my house, for the past year, it has been TACO TUESDAY, and everybody loves it! YES! Momma win! I don't have to think about what to make because I already know it is tacos.


Monday night I already know to take out the frozen ground meat, ground chicken, or whatever type of meat I want in my tacos and start thawing it in my refrigerator. I even have my homemade, EASY taco seasoning on hand since I make a big batch of spices that lasts about 4 weeks. It is such a miracle what one single night a week can do to your head space. Allowing your brain room to relax and enjoy the evening of not having to think about dinner.


Why homemade? I stopped using the taco seasoning packet that comes with most taco shells years ago. Every time I ate it, I would get a horrible migraine headache. Come to find out, it has so many preservatives in it to extend the shelf life, including MSG, that it was affecting my health. I certainly did not want to serve these to my young child and start causing him health problems as well. Steer clear of this chemical filled packet and make your own. Here is my easy recipe:

MY HOMEMADE TACO SEASONING


Ingredients

2 tablespoons chili powder

2 tsp garlic powder 1 tablespoon ground cumin 2 teaspoons cornstarch 2 teaspoons kosher salt 1 1/2 teaspoons hot smoked paprika 1 teaspoon ground coriander 1/2 teaspoon cayenne pepper (optional if you are cooking for kids. This makes it very spicy.)




Store in an airtight container for up to four weeks.


It is easy to pull together. Watch this:


~Whatever meat you choose (beef, ground turkey, shrimp, pork) with taco seasoning recipe from above.

~Hard taco shells from wherever you shop. Place in the oven for 5 minutes.

~1 can of organic beans depending on how large of a family you have: it's only 3 of us.

~a vegetable on the side (I have done corn salsa, thinly sliced cabbage, or even sliced bell peppers. Anything you may want to add inside your taco for some extra flare!)
